Our Organic Palm Sugar (তালের গুড়) is crafted from the fermented sap of Borassus flabellifer — the tall, ancient tal or palmyra palm trees that dot the rural landscape of Jessore, Khulna, and Faridpur. Skilled toddy tappers climb these towering palms each morning to collect fresh sap from the crown, which is then slow-boiled over earthen stoves in a laborious traditional process that concentrates the natural sugars into dark, deeply flavored blocks or granules of pure palm sugar. Unlike refined white sugar which is nutritionally empty, palm sugar retains significant amounts of potassium, zinc, iron, B vitamins, and antioxidants from the palm sap. It has a lower glycemic index than cane sugar, meaning it causes a gentler blood sugar response. The deep, smoky, caramel-butterscotch flavor with earthy notes is irreplaceable in traditional Bengali pitha, payesh, and sweet preparations.
