Our Organic Semolina (সুজি) is coarsely ground from organically grown hard durum wheat, producing a golden, slightly gritty flour that is the essential ingredient in suji halwa, shemai, payesh, and countless traditional Bengali breakfast dishes. Unlike refined semolina that has been bleached and stripped of nutrients, our organic semolina retains natural wheat color, moderate fiber content, and the nutty flavor that defines well-made suji preparations. Durum wheat semolina provides high-quality protein, slow-digesting complex carbohydrates, B vitamins, iron, and selenium. The coarse texture helps sauces and gravies cling when used as a coating, and creates a pleasantly textured crumb in baked goods.
